We use a mechanical system which avoids the olives being damaged. The oil is extracted in cold, no other substances are added and the oil is kept in nitrogen inert tanks. The variety we use is 100 % organic Arbequina.
As a result of this process we obtain 0.14 % acidity and a minimum stability of 2 years.
Perfectly suited for cold consumption on dishes like salads, vegetables, fish and meat. Main component of the mediterranean diet.
